Top Super Bowl Snacks

Chicken Thighs w/ Maple Mustard Sauce

serves 4

What You Need
4 chicken thighs, skin on
Salt 
Pepper
Garlic powder
Paprika
Olive oil
1 TBS garlic, minced
1/4 cup pure maple syrup
5 TBS dijon mustard
2 TBS water
1 TBS olive oil
2 cups sweet potato, cut into cubes
8 ounces green beans, ends cut off and cut in half
Fresh thyme

Directions
1. Preheat oven to 400° and mix together the maple syrup, dijon mustard, olive oil, and water in a small bowl. Set aside.
2. Season both sides of chicken thighs with salt, pepper, garlic powder, and paprika.
3. Heat a large oven proof skillet over medium to high heat and add olive oil. Once oil is hot, add in chicken thighs, skin side down. Let cook for 5 minutes or until skin is crispy and then flip over and turn down heat to medium low.
4. Add in garlic and cook for 1 minute and then add in maple syrup mixture to the pan and mix everything together. 
5. Add in sweet potatoes and toss everything together. Season whole dish with salt and pepper and top with fresh thyme sprigs. 
6. Place pan in oven and let cook for 30 minutes. 
7. While dish is cooking, place green beans into a medium sized bowl and season with olive oil, salt, and pepper. Set aside.
8. Once 30 minute are up, remove the thyme springs and add the green beans to the pan. Place pan back in oven and let cook for 15 minutes. 
9. At this point, the chicken should be cooked through and ready to eat. Enjoy!

Would recommend making extra sauce for additional drizzling once dish is cooked.

Yippie...it's officially Friday! Only a day filled with work stands in the way of me and the weekend! It is also National Chocolate Cake Day, so why not treat yourself to a delicious chocolate cake? Favorite Winter Recipes

Chicken Zoodle Soup

serves 4-6

What You Need
2 chicken breast
2 TBS ghee or butter
1 TSP herbs de provence
1/2 onion, diced
3 carrots, diced
2 garlic cloves, minced
4 cups chicken broth
1 cup peas, frozen or canned
2 TSP lemon zest
2 TBS lemon juice
2 zucchini or squash, spiralized

Directions
1. Cook chicken breast following this recipe.
2. In a large stock pot heat butter and once melted, add in onion and carrots. 
3. Cook until onions are translucent and then add in the garlic and herbs de provence. Cook for about a minute.
4. Next, add in the broth and peas. Turn heat down to a simmer and let cook for about 15 minutes or until vegetables are soft.
5. Then add in the cooked chicken and zoodles and let cook for an additional 10 minutes on simmer.
6. Add in the lemon juice, zest, and season with salt and pepper. Enjoy your healthy take on chicken noodle soup!

Hello Weekend!

Yippie...it's finally the weekend! With the busy week I had, i'm pretty excited to have a few days ahead to relax and recharge. This weekend, the Falcons are taking on the Green Bay Packers and if they win, they would be going to the Super Bowl! How amazing would that be?! Other than watching the game, I plan on hanging out with friends and just relaxing. What do you have planned for your weekend? Something fun I hope!!

How To Stick To Your New Year's Resolutions

So...it's mid January and those New Year's resolutions you made are starting to get pushed to the back burner. I get it, life gets super busy BUT, you made these resolutions for a reason. Why not try and stick it out a little longer? Maybe eventually it will become a habit (one that you actually like). To help keep you on track, i've come up with some tips to help you stick to your resolutions and make this year your best yet!

1. Be honest with yourself
- If you don't think you can stick to it, don't commit to it
- Think realistically when making goals
- Don't commit to too many goals

2. Hold yourself accountable
- Tell people about your goals so that it's harder for you to quit

3. Plan for success
- Do research
- Make a plan for any problems you may encounter
- Have everything you need and prepared to achieve your goals

4. Plan rewards
- Every week you stick to your goal treat yourself

5. Chart your success
- Mark on your calendar each day you stick to your resolution so you can see how far you've come

Chorizo Sweet Potato Hash w/ Egg

Serves 4 (picture is only 1 serving)

What You Need
For Chorizo Sweet Potato Hash
2 TBS olive oil
1 onion, diced
1/2 TSP paprika
1/2 TSP cayenne
1/2 TSP chili powder
1/2 TSP cumin
12 oz chorizo
4 medium sweet potato, diced

Toppings
4 eggs
Salsa
Cilantro
Avocado

Directions
1. Heat olive oil in large pan over medium heat. Add onion and spices and cook until translucent.
2. Next, add in chorizo and cook until browned (about 5-8 minutes), breaking it up as you cook.
3. Then add in cubed sweet potatoes and mix everything together so that sweet potatoes are coated. Add 1/2 cup water and cover pan with lid. Let cook 15-20 minutes, stirring occasionally or until sweet potatoes are soft when pierced with a fork.
4. Once sweet potatoes are softened, crack eggs over hash and cover with a lid so they can cook, about 3-5 minutes depending on how you like your eggs. 
5. Top with desired toppings and enjoy!

Hello weekend...it has been way too long since i've seen you (ok, ok 5 days but still). What a perfect weekend it is going to be here in Atlanta. Mid to high 60's?! You couldn't ask for better weather in January. I'm thinking i'll be spending some of my weekend at the park or on the Beltline taking in this awesome weather and maybe getting a little color on my face because lord knows I need it. 

In even better news- this weekend, the Falcons are taking on the Seahawks in their first playoff game of the postseason and I am super excited! I'm really hoping we show up and can pull out a win! Cinnamon Dolce Latte Cake w/ Mascarpone Frosting


Even with Christmas over, you can always use a good winter cake recipe, am I right?! Well...this cake right here was a big hit this holiday season. It is filled with cinnamon and espresso, which gives it a great wintery flavor and don't even get me started on how moist (sorry...but it's true) it is. This cake will literally melt in your mouth. Don't forget the Mascarpone frosting, because that makes it!

What You Need
For The Cake
3 cups cake flour
2 TBS instant espresso powder
1 TBS cinnamon
4 TSP baking powder
1 TSP salt
1 cup sugar
1 cup brown sugar
1 1/2 cups unsalted butter, softened
1 1/2 cups whole milk
4 eggs
1 TBS vanilla extract

For The Frosting
16 oz mascarpone cheese
1/2 cup heavy cream
6-8 cups powdered sugar
Pinch of salt

Topping
Rosemary
Cinnamon sticks

Directions
For The Cake
1. Preheat the oven to 350° and grease three circular cake pans. Cut out three circles of parchment paper and place into the greased cake pans. Set aside.
2. In a large bowl whisk together the cake flour, espresso powder, cinnamon, baking powder, and salt. 
3. Using a stand mixer on medium to high speed, cream the the butter and sugars together until fluffy. 
4. Turn speed down to medium and add in the eggs, milk, and vanilla extract. 
5. Scrape down the sides and then slowly add in the flour until completely combined. 
6. Separate the batter into the three pans and cook in the preheated oven for 20-25 minutes or until a toothpick inserted into the middle comes out clean. Let cool for 10 minutes before removing from pan. 
7. While the cakes are cooling, move onto the frosting. 

For The Frosting
1. Using an electric mixer, beat the mascarpone cheese and heavy cream together until combined and fluffy. 
2. Add in the salt and slowly beat in the powdered sugar until you reach your desired consistency and sweetness. 

Assembly
1. Remove first cake layer from the pan and place on desired serving plate. Top with enough frosting to completely cover the cake, but leaving enough for the other layers and the top. 
2. Place the second cake layer on top and cover with icing. 
3. Repeat with the last layer and then cover the whole cake with the remaining frosting. Be careful, because the frosting does slightly pull on the cake creating more crumbs in the frosting!
4. For our topping, we first placed down some fresh rosemary, then topped that with two cinnamon sticks. 
5. Then cover all that with some sugared cranberries and you are ready to go!

Chilly Weekend Ahead!

Happy Friday friends! This was another slow work week for me, but luckily it will start picking up again next week. I'm so ready to tackle 2017 and whatever it throws at me!
