Chorizo Sweet Potato Hash w/ Egg

Serves 4 (picture is only 1 serving)

What You Need
For Chorizo Sweet Potato Hash
2 TBS olive oil
1 onion, diced
1/2 TSP paprika
1/2 TSP cayenne
1/2 TSP chili powder
1/2 TSP cumin
12 oz chorizo
4 medium sweet potato, diced

4 eggs

1. Heat olive oil in large pan over medium heat. Add onion and spices and cook until translucent.
2. Next, add in chorizo and cook until browned (about 5-8 minutes), breaking it up as you cook.
3. Then add in cubed sweet potatoes and mix everything together so that sweet potatoes are coated. Add 1/2 cup water and cover pan with lid. Let cook 15-20 minutes, stirring occasionally or until sweet potatoes are soft when pierced with a fork.
4. Once sweet potatoes are softened, crack eggs over hash and cover with a lid so they can cook, about 3-5 minutes depending on how you like your eggs. 
5. Top with desired toppings and enjoy!
