Weekend Ahead!

Happy Friday! What a long and busy week this was. It felt like the emails would never stop and the weekend would never get here! BUT the craziness did keep me busy which is always good. Plus, i've been house sitting and pet sitting for my mom all week, so I cannot wait to get back to my place and sleep in my own bed. 

Now that Friday is here, I can finally kick back and relax! Literally counting down the hours until I  officially welcome the weekend with margs and guac. I hope you all have a fun weekend ahead! See ya Monday!

How To Throw The Perfect Afternoon Tea

It finally looks like winter is officially over here in Atlanta and I couldn't be happier. Now that warmer weather is upon us, it's time for fun outdoor soirées, especially outdoor tea parties! Who doesn't love an event that gives you a reason to dress up in your favorite sundress, drink tea, and snack on delicious finger food? The answer should be no one.

With the help of Donsuemor, I have put together my tips on how to throw the perfect afternoon tea. I hope y'all enjoy!

Number One- Sweets (duh!)
The most important part- food! No tea is complete without delicious finger food and Donsuemor has the perfect sweets that your guests will absolutely love. They offer biscotti, sablés, Frech almond cakes, and madelines. Just look how delicious they are! The chocolate dipped ones are my favorite, only because I have a serious chocolate addiction. Plus, nothing pairs better with tea than a chocolate dipped biscotti! 



Number Two- Drinks
This goes hand-in-hand with the food. You can offer tea (*mandatory- it is a tea party!), punch, mimosas, or even something more creative from this list of elegant tea cocktails. I always like to have a bit of variety so everyone is happy!

Number Three- Table Decorations
For an afternoon tea party, I love to decorate my table with a ton of flowers and greenery. They add a delicate touch to the table that is very appealing to the eye. Plus, you'll have lots of pretty bouquets around the house after! For this table, I started off by laying down the greenery and then coming back through with pink and white flowers. There's no right or wrong way, just let your creative juices flow!



Number Four- Place Settings
I bought some gold rimmed plates a while back and they ended up being perfect for this event! I also placed doilies on top of the plates to add a vintage touch. Top that with your saucer and tea cup and you're ready to go! 



Sweet Potato Gnocchi w/ Parmesan Cream Sauce

serves 1

What You Need
3 cups kale, de-stemmed and chopped
2 TBS ghee or butter
1 TBS coconut milk
1 small garlic clove, minced
Salt, to taste
2 TBS parmesan + extra for topping
Pine nuts, for topping

Directions
1. Make gnocchi and set aside.
2. Heat the butter in a large pan over medium heat. Once bubbling, add in the gnocchi, kale, garlic, and salt. Cook until the kale has wilted down and then remove from heat.
3. Let the dish cool down for about 5-10 minutes and then add in the coconut milk and parmesan cheese. 
4. Give everything a good toss and then serve with pine nuts and additional parmesan cheese. Enjoy!

Athens Bound!

Happy Friday, friends! Finally, we have some warmer weather coming through and I could not be more thrilled. I seriously cannot do anymore cold weather! I am so ready to trade in my jeans and sweaters for dresses and tank tops. Who's with me?! 

Luckily this week wasn't too crazy for me, so I was able to get a lot done around the house. My apartment is slowly but surely coming together! One of these days I will do a house tour once it's all put together, but who know's when that will be...

This weekend i'm headed up to Athens for my sister's parents weekend and birthday celebration. It should be a fun filled weekend with a lot of eating, drinking, and good times! Be sure to follow along on Snapchat and Instagram (smwrightt) for all the fun. Have a wonderful weekend!

Savory Sweet Potato Waffles

serves 1

What You Need
For The Waffles
1 sweet potato, grated (about 1 1/4 cup)
1 egg
2 TBS coconut flour
1/2 TSP salt

For The Guac
1 avocado, ripe
1 green onion, diced
2 TBS lime juice
2 TBS fresh cilantro, chopped
Salt & pepper, to taste

Toppings
1 egg, cooked how you like it
Hot sauce, Sriracha, honey, etc.
Fresh cilantro, chopped

Directions
For The Waffles
1. Preheat the waffle iron. 
2. In a medium sized bowl, stir together the grated sweet potato, egg, salt, and coconut flour until combined.
3. Spray waffle iron with Pam and spoon mixture onto the iron. Be sure to spread it out evenly. Let cook for 10-12 minutes or until set. 

For The Guac
1. In a small bowl, mash up avocado. 
2. Mix in the green onion, lime juice, and cilantro.
3. Season with salt and pepper.

Assembly
1. Place waffles onto plate and top with egg, guac, Sriracha, and fresh cilantro. Enjoy!!

Happy Friday!

Heeelllooo Friday! Whew, am I excited to see you! It has been an exhausting but productive week for me filled with appointments and networking events. I couldn't be happier for the weekend ahead so that I can recoup for at least a day or so. I need some major R&R time to catch up on sleep!

I'm also sending some major prayers up for the weather to warm up and rain to go away. Any help is greatly appreciated! I mean, I am so ready to toss the jeans and break out the dresses...a girl can dream right?! Even though i'm tired, i've got to power through because i've got a pretty fun weekend ahead! I'll be heading up to Athens to celebrate any sister's birthday a few days early and then going to the Patio Party and Crawfish Boil at The Optimist on Sunday. It should be a pretty nice day to spend some time outside with friends. I hope you all had a wonderful week! See you Monday!

Festive Ways To Celebrate St. Patty's Day

Time to break out the green beer, green food, and green clothes, because St. Patty's Day is only a couple days away! This is such a fun holiday to celebrate because it's filled with four leaf clovers, beer, and a guaranteed good time. I mean, how can al of that not be fun?! If you still don't know how to celebrate this year, i've rounded up some good ideas below that go from very simple to very extreme. Be sure to check them out!

P.S.- Don't forget to wear green, unless you want to be pinched all day!

1. Make something that's green
- When is puppy chow not the perfect desert?
- These Lucky Charms pancakes look like any child's dream
- If you're feeling crazy, try out this Irish fishbowl cocktail
- These mint chocolate chip cookies look delicious

2. Drink a lot of beer
- At this boozy brunch through the Highlands
- At Luckyfest XL's three day event at Park Tavern
- Party in the streets of Buckhead with Fado Irish Pub
- Each Meehan's location has different events going on the celebrate (Midtown sounds the best!)
- Or just go to your local pub

3. Wear green
- Top options: casual v-neck, peplum top, lace-up sweater, shamrock tee, fringe cardigan,  and an off the shoulder blouse
- Bottom options: suede skirt, drapey shorts, and ripped skinny jeans
- Jewelry options: tassel earrings and triple tier drop earrings
- Dress it up with this tunic or this plaid dress
- Or just throw on an army jacket


5. Travel to Ireland and celebrate in true Irish Fashion (I wish!)

Honey Mustard Pecan Salmon Quinoa Bowl

Serves 4

What You Need
For The Quinoa
1 cup quinoa
3/4 bunch of kale, de-stemmed and roughly chopped
1/4 cup water
3 TBS olive oil
1 cup sun-dried tomatoes, diced with some of the juice
1 1/2 TBS fresh lemon juice
Salt and pepper, to taste

For The Salmon
4- 4 oz. salmon fillets
2 TBS mustard
2 TBS honey
1/2 cup pecans, slightly crushed
1/2 TSP paprika
Salt and pepper, to taste

Directions
For The Quinoa
1. Cook the quinoa according to the package directions. Set aside.
2. In a large pan, heat olive oil over medium heat. Add in the kale and water. Toss everything together. Cover and let cook for 3-5 minutes. 
3. Give everything a stir and turn heat down to low. Remove cover and let cook for 10-15 minutes or until tender. Season with salt and pepper.
4. Next, add in the quinoa, sun-dried tomatoes, and lemon juice. Mix everything together and then season with salt and pepper.

For The Salmon
1. Preheat the oven to 375° and line a baking sheet with foil.
2. Place salmon fillets on a pan, skin side down. 
3. In a small bowl, combine the mustard and honey. Pour over the salmon, being sure to rub it into the  fillet. 
4. In another small bowl, combine the crushed pecans with the paprika. Press mixture onto each salmon fillet and season with salt and pepper.
5. Bake in the preheated oven for 9-13 minutes, or until salmon is cooked through. 

Assembly
1. Place your quinoa mixture onto your desired serving dish and then top with a salmon fillet. 
2. To make it extra tasty, drizzle with additional mustard/honey mixture and pecan/paprika mixture. Enjoy!!

I'm super jealous of everyone going on Spring Break right now! I wish I could be sailing around in the Caribbean with my besties, but instead i'm working away here in Atlanta. Major bummer, BUT it is Friday and that's something to celebrate! 

It was a pretty busy work week for me, so I am happy to see the weekend ahead. It's suppose to be nice Saturday, so I see a farmer's market and the Beltline in my near future. Other than that, i'll be enjoying time with friends and exploring more of Atlanta. I hope y'all have fun weekend plans! If you don't know what to do yet, check out my top things to do this March. Best Guacamole Dip

Makes about 2 cups

What You Need
3 avocados
1/4 red onion, diced
1 roma tomato, diced
1/4 cup cilantro, minced
Juice of 1 lime
2 TSP garlic, minced
Crushed red pepper (or hot sauce), to taste
Salt and pepper, to taste

Directions
1. In a medium sized bowl, mash the avocado with a fork until it has a smooth consistency.
2. Stir in the red onion, roma tomato, cilantro, lime juice, garlic, red pepper, salt, and pepper. 
3. Pair with some chips and enjoy!!

Time To Relax!

Yippie, it's Friday and I can't wait to have a few days to relax! Luckily, I had a short work week because I was traveling back from San Diego on Tuesday, but I am still so happy the weekend is here. By the way- San Diego was a blast! I got to meet some great people and learn a ton about a new company we recently acquired for our territory. I also got to explore a city i've never been to! Although, I think I am still a little exhausted from the time change and all the walking we did, but it was well worth it.

This weekend, it's going to be freezing here in Atlanta, BUT that won't stop me from having a little fun! Tonight, i'm trying out a new restaurant in Chamblee called Southbound. From what I saw online, it looks amazing! Saturday, i'm headed to Serenbe for the Little Barn Apothecary's grand opening. I can't wait to checkout the new location and all their amazing product!
