Busy Weekend Ahead!

Finally the weekend is here and I couldn't be happier! This week was another busy one for me because I had another manufacture in town. Luckily, it wasn't as busy as last week but it was still pretty packed with appointments and updates. I did get to check out the new Star Provisions and the space was beautiful! It was a great place to go and work during lunch, except they need to expand their menu just a little bit. They do sell Batdorf and Bronson though, and that gets them some major points because it is the best coffee!

Now onto the weekend and for me, it is another busy one! I've got 
one of my friend's engagement party, a blogging event up in Alpharetta, and a sip n dip with my mom and sister. I also have to get everything finalized for my trip to Thailand before I head to San Francisco next weekend. I seriously can't wait! FYI, I will not be blogging while I am gone so be sure to add me on Instagram (smwrightt) and Snapchat (smwrightt) to follow all the fun. Have a great weekend!

Whew, it's been a LONG TIME since i've done one of these...September 2016 to be exact! Instead of going back that far, i'm just going to update y'all on my most recent posts so this isn't a million pages long. I hope y'all enjoy this little window into my everyday life!

Anna, Summer (my dog) & Myself: This was from Easter Sunday! We spent the morning at Buckhead Church and then had brunch at Empire State South. It was pretty good, but can't beat some of my other brunch spots (like Folk Art and Buttermilk Kitchen). If you go, definitely get the ESS Benedict and the chai latte!

Anna & I Holding Beers: The Atlanta Braves had their home opener against the Padres and my mom, sister, and I got to go that Saturday night. It was an absolute blast! SunTrust Park is amazing and a great place to hangout even if you aren't going into the game. We got dinner at Antico (which was amazing by the way!) and then got some pre-game drinks at the Terrapin Taproom. We tried the Chopsecutioner, Terrapin's new beer aged on baseball wood chips and it was actually really good!

Coffee & iPad: I love going to church, but sometimes I just want to stay in bed and lounge on Sunday mornings. That is a big thing that I love about Buckhead Church (right behind Andy Stanley...duh!). I can enjoy my breakfast and coffee, while still feeling like i'm at church by watching Andy's sermon on my iPad or computer. Don't get me wrong, I love getting dressed up for church and spending my Sunday morning worshiping along with others, but sometimes I just need to relax a little bit longer!

Anna, My Mom & Myself: My sister, Anna, had her parents weekend a few weeks back, so my mom and I headed up to Athens for the weekend. Friday night, we got to celebrate her birthday at Last Resort with lots of food, wine (maybe a little too much, but hey- it was a celebration!), and cake. Saturday, we enjoyed a morning hike and then spent the day exploring Athens and hanging out with my sister's roommates and their families. It was a great weekend in a great town!

Oyster Bar Koozie: A few weeks back, The Optimist had an oyster fest that was a lot of fun! It was so crowded that they ran out of food fairly early, but they had some great drink specials to make up for it. If you're looking for a fun and lively Sunday afternoon, definitely hit up their next Sunday event!

Me Holding A Shamrock Cookie: If you didn't already know, cookies are my absolute favorite sweet! So, on St. Patty's Day I knew I had to get something festive to celebrate. I headed to my favorite bakery, Alon's (that just happens to be on my way to work) to get this delicious sugar cookie! 

Varuni Napoli Pizza: Seriously- if you haven't been here yet, you haven't lived! Varuni Napoli is one of my favorite pizza spots in Atlanta right up there with Antico. I celebrated Pi Day with this delicous pizza, appetizers, deserts, and homemade limoncello all with my fellow Dining Out ambassadors. It was a Pi Day well spent!

My Mom & I: In February, my mom and I headed out to San Diego for a work trip. We went in a few days early so we could explore the city before all the work started. We stayed at the Palomar in the Gas Lamp district, which was right in the middle of all the fun! Bars, restaurants, and shopping were all around us. We walked the Gas Lamp District, explored Balboa Park, and wandered around the waterfront. We had a great time! 

Overnight Chocolate Almond Butter Chia Pudding

Serves 2

What You Need
Almond Butter Layer
1/2 cup almond milk
2 TBS almond butter
1 TBS maple syrup
2 TBS chia seeds
Sea salt, to taste

Chocolate Layer
1/2 cup almond milk
1 TBS cacao powder
1/2 TB almond butter
2 TBS maple syrup
2 TBS chia seeds
Sea salt, to taste

Almond butter
Cacao nibs

Almond Butter Layer
1. In a small bowl, whisk together all the above ingredients for the almond butter layer.
2. Cover and let sit in fridge overnight.

Chocolate Layer
1. In a small bowl, whisk together all the above ingredients for the chocolate layer.
2. Cover and let sit in fridge overnight.

1. Divide the almond butter layer between two serving dishes. 
2. Next, spoon a layer of almond butter over the almond butter layer.
3. Then, top it off with the chocolate layer divided between the two serving dishes.
2. Sprinkle with cacao nibs and enjoy!

I am feeling major TGIF vibes today and am so happy the weekend is ahead of us! What a non-stop crazy week it has been for me. I had a manufacture in town and because of that, the week has been super busy. We have had appointment after appointment! Thanks to the I-85 collapse, it takes me double the time to get to my appointments, so I feel like i've been in the car so much this week. Counting down the days until the bridge is fixed and life can go back to normal!

This weekend I plan on doing NOTHING and it is going to be amazing! Also, this is my last free weekend before my trip to Thailand so I plan on laying everything out and getting everything in order before I leave. I'll also be working on a fun DIY project for my apartment. Thanks to Craigslist, I got a super cute bookcase for $20 and all it needs is a new coat of paint and a new pretty knob. I can't wait to show y'all! See ya Monday!

My Favorite Spring Recipes

Cilantro Lime Chicken "Rice" Bowls

Serves 4

What You Need
For The Chicken
1 lb chicken breast, sliced into strips
 1/4 cup olive oil + 2 TBS for pan
1/2 cup fresh lime juice
1/2 cup fresh cilantro, chopped
2 garlic cloves, minced
1/2 TBS honey
Salt and pepper, to taste

For The Rice
3 cups cauliflower, riced in food processor
2 TSP garlic powder
1 TSP cumin
1/8 TSP sea salt
1 cup black beans, drained and rinsed
1/4 cup red onion, diced

Cherry tomatoes
Bell pepper

For The Chicken
1. Mix the olive oil, lime juice, cilantro, garlic cloves, and honey in a bag. Add in the chicken strips and let marinate for at least 2 hours, but it's best if marinated overnight. 
2. After the chicken has marinated, heat 2 TBS olive oil in a large skillet over medium heat. Add chicken strips and marinade into the pan and cook until no longer pink, about 10 minutes. Set aside and keep warm.

For The Rice
1. In the same pan used for the chicken (if there is too much liquid in the pan, drain it a little), add the riced cauliflower and spices. Cook over medium heat for about 5 minutes.
2. Add in the black beans and red onion and cook an additional 2 minutes. 
3. Now, get your bowls ready!

1. Spoon cauliflower rice onto desired serving plate. 
2. Top with chicken and desired toppings. 
3. Enjoy!!

Easter Weekend!

Happy Friday and happy Easter weekend! What a busy week it was...BUT it was all worth it for the fun next few days I have ahead. Today, my sister is coming into town and I can't wait to spend the weekend with her! We will be taking advantage of this beautiful weather by grilling out, cheering on the Braves, and celebrating Easter with church and brunch. I hope you all have fun plans for this weekend! Easter Brunch Ideas

Chocolate Covered Almond Butter Eggs

makes 7 eggs

What You Need
2/3 cup almond butter
1 TBS pure maple syrup
1 TBS coconut flour + more if needed
4 oz dark chocolate
Sea salt

1. Combine the almond butter, maple syrup, and coconut flour in a small bowl. It should be a cookie dough like consistency, but if it isn't add 1 additional TBS of coconut flour.
2. Line a baking sheet with parchment paper and scoop dough onto it.
3. Mold the dough into egg-like shapes using your fingers and then place in the freezer for 30 minutes.
4. Once 30 minutes are up, melt the chocolate on the stove over low heat. If it is chunky, add in a little vegetable oil until it smooths out.
5. Remove the eggs from the freezer and quickly dip each into the chocolate, being sure to cover all sides.
6. Place back on parchment paper and sprinkle with some sea salt.
7. Once all are covered and sprinkled, place back in freezer for an hour then serve!

Hello (almost) weekend! What a crazy storm filled week it has been here in Atlanta. I'm glad the storms are gone, but i'm really hating this cold weather they brought. Seriously, the weather just can't make up it's mind. One minute it's hot, one minute it's cold...get it together!

Luckily, this weekend it's suppose to be pretty nice here in Atlanta. To enjoy this warmer weather, I plan on spending the weekend outside at the Atlanta Dogwood Festival. I can't wait to hangout with friends and just enjoy some tunes in the park. What are y'all up to this weekend? Something fun I hope! See you Monday!

Mahi Mahi Lettuce Wraps

serves 3-4

What You Need

For the Mahi Mahi
1 lb mahi mahi fillets
1/2 TSP paprika
1 TSP coconut sugar
1/2 TSP garlic powder
1/2 TSP onion powder
1/2 TSP sea salt
1 TSP cumin
1/4 TSP chili powder
1/4 TSP black pepper
1/4 TSP dried oregano
2 TBS olive oil

For the Coleslaw
1 cup green cabbage, thinly sliced
1 cup red cabbage, thinly sliced
1 cup carrots, shredded
1 cup red bell pepper, thinly sliced
1/2 cup green onions, sliced
Zest of 1 lime
2 TBS fresh lime juice
1 TBS honey
2 garlic cloves, minced
2 TBS olive oil
1/4 cup cilantro, chopped
Salt and pepper, to taste

Lettuce for wraps
Avocado, for topping
Cilantro, for topping
Lime wedges, for topping


For the Mahi Mahi
1. Combine all the spices into a bowl.
2. Rub onto both sides of the fish.
3. Heat olive oil in a medium sized pan over medium-high heat. 
4. Once hot enough, add in the fish. Cook each side for about 3-4 minutes or until cooked through.
5. Set aside and keep warm.

For the Coleslaw
1. Add all the cabbage, carrots, bell pepper, and green onions to a large bowl. 
2. In a small bowl, whisk together the zest of one lime, lime juice, honey, garlic cloves, and olive oil. 
3. Add in the cilantro, salt, and pepper and mix everything together.
4. Pour over the veggies and toss together.

1. Fill lettuce wrap with fish and the top with coleslaw, avocado, and cilantro. Squeeze a little lime juice on top and enjoy!
