Thai Glazed Chicken & Brussels

Hello everyone!! It's been a while, hasn't it? If you followed along on Instagram, you saw all the fun I had in Thailand. If not don't worry, I will be recapping the trip on the blog in the next couple weeks! 

Since i've been back, i've had some major withdrawals from all the delicious Thai food that I had while I was away. To help satisfy my cravings, I made this absolutely delicious Thai chicken and brussels bowl. It is definitely one of my new favorite dishes that I plan to make on the reg. Try it out and let me know what you think!

serves 2

What You Need
For The Sauce
1/2 cup water
4 TBS honey
4 TBS coconut aminos
2 TBS rice vinegar
2 TBS lime juice
2 TBS coconut sugar
2 garlic cloves, minced

For The Brussels
1 LB brussel sprouts, bottoms chopped off and cut in half
Olive oil
Salt & pepper

Everything Else
1 LB chicken breasts
1 TBS olive oil
1 cup cooked quinoa
Green onions, sliced
Sesame seeds

Directions
For The Sauce
1. In a medium sized bowl, whisk together sauce ingredients.
2. Set 1/2 cup of sauce aside for marinade (see below) and pour remaining sauce into a medium sauce pan over medium/high heat. 
3. Once boiling, reduce heat to low. Simmer for 30 minutes or until sauce has thickened. Stir occasionally. 

For The Chicken
1. Place chicken breasts into a bag with 1/2 cup of marinade. Let sit for at least 30 minutes in the fridge, but best if left overnight. 
2. After chicken has marinated, heat olive oil in a pan over medium heat and add chicken with the marinade. 
3. Cook for 8-10 minutes on each side or until no longer pink.

For The Brussels
1. Preheat oven to 400°.
2. Spread brussel sprouts onto a rimmed baking sheet and drizzle with olive oil, salt, and pepper.
3. Cook in the oven for 20-25 minutes or until crispy. If needed, turn broiler on and cook for 3-5 minutes for extra crispness. 

Assembly
1. Place quinoa and brussel sprouts on a plate. Top with chicken and drizzle with sauce, green onions, and sesame seeds. Enjoy!

First Stop San Francisco, Next Stop Thailand!

Happy Friday and Happy Cinco de Mayo! Today is my last day in ATL for about three weeks...can you believe it?! Tomorrow morning I head out to San Francisco to spend a few days exploring the city before I leave for Thailand. While in San Francisco, I plan on seeing all the traditional tourist sites- the Golden Gate bridge, Fisherman's Warf, the Painted Ladies, Lands End, the Ferry Building, China Town, the Mission District, and even a day trip to Napa. It's going to be so exciting exploring this new city! If you have any SF musts, send them my way!

Then, next week I head out to Thailand for two weeks! We will be visiting Bangkok, Chiang Mai, and Phuket. It is going to be an amazing trip filled with temples, elephants, monkeys, amazing Thai food, and beach lounging. Unfortunately, I will not be posting on the blog while I am away. I tried that last Summer when I was in Europe and too many problems kept coming up. Instead, I will be posting on Instagram (smwrightt) and Snapchat (smwrightt), so be sure to follow along to see all the fun! See y'all in a few weeks!

Mediterranean Cauliflower Rice + Paprika Chicken

Serves 3

What You Need
Mediterranean Cauliflower Rice
4 cups cauliflower rice
2 1/2 TBS fresh parsley, chopped
1/4 cup olives, pitted and quartered 
1 TBS lemon zest
1 TBS lemon juice
1/2 cup chicken stock
1/8 TSP black pepper
1/2 TSP sea salt
1/4 TSP garlic powder
1 TBS olive oil

Paprika Chicken
1 LB chicken breast
1/2 TSP sea salt
1 TSP garlic powder
1/8 TSP black pepper
1/2 TSP onion powder
1 TSP paprika

Directions
Mediterranean Cauliflower Rice
1. Preheat the oven to 375°.
2. In a medium sized bowl, combine all of the cauliflower rice ingredients and mix well. 
3. Next, spread out the mixture on a baking dish. Set aside.

Paprika Chicken
1. In a small bowl, combine all of the paprika chicken ingredients other than the chicken breast.
2. Rub spice mixture (save a little bit for next step) on each piece of chicken and then place on top of the cauliflower rice. 
3. Sprinkle remaining seasoning over entire dish. 
4. Cook in preheated oven for 45 minutes or until chicken is cooked through. Enjoy!
