Overnight Strawberry Chia Pudding

serves 1-2

What You Need
3 large strawberries
3 1/2 oz coconut milk (or milk of your choice)
3 oz water
Pinch of salt
1 TBS honey
1/2 TSP vanilla extract
3 TBS chia seeds

Coconut flakes

1. Using an immersion blender or food processor, blend together the strawberries, coconut milk, water, honey, and vanilla. 
2. Stir in the chia seeds, cover and set in the fridge overnight.
3. Take out in the morning and top with strawberries, coconut flakes, and granola. Enjoy!
