Avocado Mango Salmon + Coconut Cauli-Rice

serves 4

What You Need
For the Salmon
4 salmon filets
3 TBS olive oil
2 TSP lime zest
3 TBS fresh lime juice
3 garlic cloves, minced
Salt and pepper to taste

For the Avocado Mango Salsa
1 mango, peeled and diced
1/2 cup green pepper, diced
1/4 cup fresh cilantro, chopped
1/3 cup red onion, diced
1 avocado, diced
1 TBS fresh lime juice
1 TBS olive oil
1 TBS coconut water
Salt and pepper, to taste

For the Coconut Cauli-Rice
1 TBS coconut oil
1 head cauliflower, riced
1 can full fat coconut milk
1 cup unsweetened coconut flakes
1/4 cup fresh lime juice 
4 TSP lime zest
1/2 cup fresh cilantro, chopped

Toppings
Cilantro, chopped
Lime wedges

Directions
For the Salmon
1. In an oven safe baking dish, whisk together the olive oil, lime zest, lime juice, garlic and season with salt and pepper. 
2. Place salmon into dish and give them a swirl to fully coat. Let marinate at least an hour, flipping half way through. 
3. Once you are almost done marinating, preheat the oven to 425°. Cook salmon in oven for 10-12 minutes or until flaky. Keep warm.

For the Avocado Mango Salsa
1. In a medium bowl, combine mango, pepper, cilantro, red onion, avocado, lime juice, olive oil, and coconut water. 
2. Season with salt and pepper and place in fridge.

For the Coconut Cauli-Rice
1. If you haven't already, rice your cauliflower in a food processor or high speed blender.
2. Heat olive oil in a skillet over medium heat. Once warm, add in the riced cauliflower and cook for 5 minutes. 
3. Stir in the coconut milk, shredded coconut, and 3 TSP lime juice and bring mixture to a low boil.
4. Reduce heat to low and let simmer for 10 minutes, or until most of the moisture is absorbed.
5. Stir in the remaining lime juice, lime zest, and fresh cilantro. Cook until everything is heated and most of the lime juice is absorbed. 
6. Season with salt and pepper.

Assembly
1. Place coconut cauli-rice onto desired serving dish. 
2. Top with salmon and then mango avocado salsa. 
3. Garnish with fresh cilantro and a lime wedge. Enjoy!

Bachelorette Weekend!

Hello weekend! It is so nice to see you! It has been another busy week for me. I've spent most of the week driving, and yesterday was no exception. Yesterday, I headed down to Tybee to kick off one of my best friend's bachelorette weekends. This is going to be a weekend for the books! Last Minute Labor Day Trips From Atlanta

1. 30A (Drive time: 5 hours)
This is my favorite beach spot in the gulf! It's about 5 hours from Atlanta to Seaside, FL and they have the most beautiful beaches ever. You can go to any of the 30A towns and you will not be disappointed. Get a cute Airbnb and enjoy the white sandy beaches and small town feel. 


2. Charleston (Drive time: 4 hours 45 minutes)
This is another one of my favorite seaside spots. Charleston has it all- the beach, old southern homes,  and great food, drinks, and shopping. You can't go wrong visiting this beautiful city. Stay down near the Battery or near King Street and you're all set!


3. North Georgia (Drive time: 2 hours)
North Georgia is a great spot to visit if you don't want to drive far. Head up to any of the beautiful lakes and spend your weekend soaking up the sun. If you get bored of lounging, head to a vineyard or try horse back riding. They also have great hiking trails up there. 


4. St. Simons (Drive time: 4 hours 20 minutes)
St. Simons is a hidden gem down on the Georgia coast. It is filled with southern charm, great restaurants, and the beach. Spent your weekend exploring the area and getting your tan on. Book a cute Airbnb within walking distance to the beach and truly relax away from the hustle and bustle of the city. 

Thai Turkey Burgers w/ Almond Butter Slaw

makes 4 burgers

What You Need
For The Burger
1 lb ground turkey
1/2 cup carrots, shredded or diced
1 TBS cilantro, chopped
1 green onion, diced
1/2 TSP salt
1/2 TSP garlic powder
1/2 TSP ground ginger
Olive oil

For The Almond Butter Sauce
2 TBS almond butter
1 TBS coconut aminos
1 TBS rice vinegar

For The Slaw
2 TBS almond butter
3 TBS rice vinegar
2 TBS coconut aminos
1 TBS water
1/2 TSP garlic powder
1 TSP sesame oil
1/4 TSP ground ginger
10 oz. coleslaw mix
1 TBS green onions

Directions
For The Burger
1. In a medium bowl, combine (with your hands) all of the above ingredients except the olive oil. Form into 4 patties.
2. Heat oil in a medium sized pan over medium/high heat. Once warm, add in patties and cook for 4 minutes each side. 
3. Check with a meat thermometer to see if the internal temp has reached 165°. If not, flip and continue process until cooked through. Set aside.

For The Almond Butter Sauce
1. In a small bowl, whisk together all of the ingredients and set aside.

For The Slaw
1. In a medium sized bowl, whisk together everything but the coleslaw mix and green onions.
2. Stir in the coleslaw and green onions. Make sure to coat everything! Set aside.

Assembly
1. Place your burger on desired serving plate. Top with almond butter sauce and then coleslaw mix.
2. Top with additional green onions if desired. Enjoy!

Time For Some R&R

TGIF! It has just been one of those weeks, where I have been running around like a mad women trying to find more hours in the day. I can never seem to get enough done in 24 hours! This week, we had a manufacture in town (aka no time to do anything but travel and see clients), so I am thankful to have today free to catch up on emails. 

This weekend, I plan on relaxing and catching up with friends. I'm checking out Two Urban Licks tonight, which I haven't been to in probably 10 years. I'm hoping it is just as good as it was back then! I'm also using my Dining Out Passbook for BOGO entrees. If you don't have one, you are really missing out on a great deal. I haven't done one of these in a few month, so I figured i'd catch y'all up on all that i've been up to! It's definitely been a fun past few months filled with food, travel, and great memories. I hope you enjoy!

Flip Burger New Menu Tasting: This past weekend, I had the pleasure of tasting Flip Burger's new menu. We got to try 7 different dishes and boy were they good! My favorites were the A5 and the Pork Belly, but you really couldn't go wrong with any of them. The menu is in stores now, so be sure to check it out!

Ponce City Market Banana Leaf Doors: A few weeks ago, Le Pop Discotheque hosted a silent disco at Ponce City Market to celebrate the launch of PCM's new Spotify channel. We got to dance the night away to some great jams, while sipping on awesome drinks from The Mercury. 

Me + Skinny Dip Sign: For the 4th of July, I headed down to Charleston with my mom and sister for a mini vacation. It was so nice to get out of Atlanta and spend some time on the beach. We also got to explore King Street (where we found this awesome sign) and eat some awesome food. We even spotted a Southern Charmer while we were bebopping around!

My Room: A couple weeks ago when I couldn't sleep, I decided I wanted to spruce up my apartment a little bit. I started re-arranging and making lists of things I needed to buy. Since then, my apartment has really come together. Be on the lookout for a home tour soon!

My Sister, Cousin, & Me: My mom, sister, and I hosted a baby shower for my cousin to celebrate her baby girl. That little girl has since been born and is the most adorable baby in the world. Check out my cousin's blog to see all about little Olivia. 

Campbell's Tomato Soup: Last month, some friends and I attended the High Museum's First Friday to kick off the new Andy Warhol exhibit. I had never been to the High Museum before, so I was super excited to check it out! I had a blast and seeing Andy Warhol's art was amazing! If you have a chance, be sure to go see it now through September 3rd.

Anna & I On An Elephant: In May, Anna and I went on a trip to Thailand. We found a great deal through Groupon and loved exploring a new part of the world that we had never seen before. The elephant riding was the highlight of the trip! If you didn't see my recaps of Bangkok, Chiang Mai, and Phuket, be sure to check them out. 

Anna & I At A Vineyard: Before we headed to Thailand, we stopped in San Francisco for a three day visit. We saw the Golden Gate Bridge, the Painted Ladies, Fisherman's Warf, and many other tourist attractions. We also did a day trip to Napa, which was a blast! 

Mimosa + L'Occitane: I had a blogging event at L'Occitane with Dining Out Atlanta, where we were treated to facials, hand massages, and mimosas. I fell in love with their toner and had to grab one for myself! 

Creamy Mushroom, Kale, & Lentil Soup

serves 4

What You Need
3/4 cup green lentils
1 TBS olive oil
1/3 cup onion, diced
1 lb mixed mushrooms, sliced
Sea salt & pepper, to taste
2 garlic cloves, minced
2 TSP fresh thyme leaves
2 TBS lemon juice
2 TSP coconut aminos
3 cups chicken broth 
1/3 cup almond milk
4 kale stalks, stems removed & leaves chopped

Directions
1. Fill medium sauce pan halfway with water and heat over medium/high heat. Once boiling, add lentils and a pinch of salt. Cook for about 20 minutes, or until tender, and then drain and set aside.
2. In a medium/large soup pot, heat olive oil over medium heat. Once warm, add onion and cook until lightly browning and translucent. 
3. Add mushrooms and season with salt and pepper. Let them sit, without stirring for 2 minutes.
4. Next add in the garlic and thyme. Stir everything together well. 
5. Turn heat up to medium/high and add in the lemon juice, coconut aminos, lentils, chicken broth, and almond milk. Stir everything and bring to a boil. Then, turn heat down to a simmer. 
6. Place half of the soup in a blender or food processor and process until smooth. Add back to the soup pot with the kale and stir everything together. Add salt and pepper to taste.
7. Enjoy your delicious and fiber filled meal!

It's Friday!

Hello Friday! Boy am I glad to see you! Time to take a break from work and enjoy good food, this city, and even better company. Sadly, this weekend is like the end of Summer for me. I have to say farewell to my sister as she heads back to Athens for her last year of college. I'm already counting down the days until I get to go visit her! What are y'all up to this weekend?
