Banana Chocolate Chip Muffins

Makes 12 muffins

What You Need
4 eggs
2 ripe bananas
1/4 cup maple syrup
1 TSP vanilla extract
1/4 cup coconut milk
1/2 cup coconut flour
1/4 cup tapioca flour
1/4 cup + 2 TBS unsweetened cocoa powder
1/2 TSP baking soda
1/2 TSP baking powder
Pinch of sea salt
1/3 cup chocolate chips, I prefer Enjoy Life

1. Preheat your oven to 350°. Line or grease your muffin pan.
2. In a large bowl mash the bananas and then whisk in the eggs.
3. Next, whisk in the coconut milk, maple syrup, and vanilla until smooth.
4. In a small bowl, combine the coconut flour, tapioca flour, cocoa powder, baking soda, baking powder, and salt. 
5. Slowly stir the dry mixture into the wet. Let sit for 5 minutes (so the coconut flour can expand) and then fold in the chocolate chips. 
6. Fill the muffin liners 2/3 of the way and then bake in the oven for 20 minutes or until a toothpick inserted into the middle comes out clean.
7. Enjoy your delicious, guilt free muffins!
