Dark Chocolate Sea Salt Thumbprint Cookies

makes 16 cookies

What You Need
2 cups almond flour
1/2 cup arrowroot powder
1/4 cup + 1 TBS coconut oil, melted
1/4 cup maple syrup
1/2 cup full fat coconut milk
1/2 cup chocolate chips, these are my favorite paleo chocolate chips
Sea salt, for topping

1. Preheat the oven to 350° and line your baking sheet with parchment paper.
2. In a medium bowl, mix the almond flour, arrowroot powder, coconut oil and maple syrup.
3. Roll the dough into 16 balls and then place on the baking sheet.
4. Using your thumb, make an indention in the center of each cookie.
5. Bake in the oven for 8-10 minutes or until they start to slightly brown around the edges. 
6. While the cookies are baking, combine the chocolate chips and coconut milk in a saucepan over medium heat. Stir until everything is melted together.
7. Once you take the cookies out, reapply the thumbprint if necessary. Then pour a little bit of chocolate in each cookie. Let them completely cool.
8. Once cool, sprinkle with sea salt and enjoy!
