Merry Christmas & Happy Holidays!

This was one of the longest weeks I have had in a long time. I had one of my bosses in town, so it was non-stop from Tuesday until yesterday. I didn't have a second to breath or get anything done! Luckily, I am taking today slow and catching up on all things work before I take a few days off for Christmas. I can't wait to watch Christmas movies, eat cookies, drive around and look at lights and spend time with my family! 

Regarding the blog, I will be taking the rest of the year off to get ready for 2019. I can't wait to start the new year off with a bang! I am so grateful for you all and wish you all a very happy holidays. I will still be active on Instagram, more than likely asking y'all what you want more/less of in 2019. Any input is GREATLY appreciated! See you in 2019!

Chocolate Dipped Almond Shortbread Cookies

makes 12 cookies

Christmas Eve is only a week away. Can you believe it?! Each year, my Mom, Sister and I have a baking day to really get into the Christmas spirit and this year did not disappoint. We made a total of five cookies and these Almond Shortbread cookies were one of them. They are sweetened with maple syrup, but dipping them in chocolate really puts the flavor over the top! 

What You Need
1 cup almond flour
1/3 cup coconut flour
1/4 cup maple syrup
1/3 cup coconut butter
1 TSP almond extract
1/4 TSP himalayan salt
1/2-3/4 cup Enjoy Life chocolate chips, melted

Directions
1. Preheat the oven to 350° and line a baking sheet with parchment paper.
2. In a medium to large bowl, whisk together the maple syrup, coconut butter and almond extract.
3. Stir in the almond flour, coconut flour and salt until a ball of dough forms.
*I found it easier to use my hands towards the end to make it into a ball.
4. Roll out the dough on a flat surface until it is about 1/4" thick. Using a circle cookie cutter, cut out 12 cookies and then place them on the parchment lined baking sheet.
5. Bake in the oven for 10 minutes and then let cool.
6. Once completely cool and chocolate is melted, dip the side of the cookie into the chocolate and then dip the entire bottom of the cookie into the chocolate. Place back on the parchment lined baking sheet.
7. Repeat until all cookies are dipped and then place in the freezer for 10 minutes. Remove from the freezer and let the cookies sit out 5 or so minutes before eating. Enjoy!

Christmas Filled Weekend Ahead!

Happy Friday! Luckily, this week was a slower one for me. I had time to catch up on a lot of stuff (finally got my stove installed- yay!) and prepare for 2019. This weekend I am spending a lot of much needed time with my family over a pre-Christmas dinner and cookie baking. I can't wait to stuff my face with all the homemade sweets. Tis' the season, right?! In other thrilling news, I am finally trying out Karma Daisy for lunch. I am excited to check out the space and taste some delicious, good-for-you food. I hope you all have a wonderful weekend!

Chocolate Banana Oatmeal Squares

makes 16 squares

What You Need
2 1/2 cups oatmeal (I used gluten free oats)
2 TBS flax meal
1/3 cup coconut flakes
1 TSP cinnamon
1 TSP vanilla
1 cup almond milk
2 bananas, finely chopped
5 dates, finely chopped
1/2 TSP himalayan salt
1 TSP coconut sugar
6 TBS Enjoy Life chocolate chips, melted

Directions
1. Preheat the oven to 350° and line a 8x8 pan with parchment paper.
2. In a large bowl, combine the oats, flax meal, coconut flakes, and cinnamon. 
3. Stir in the milk and vanilla.
4. Lastly, fold in the bananas, dates and salt.
5. Spread batter into the 8x8 pan and then bake in the oven for 30 minutes or until edges start to brown.
6. Once cooked through, remove from oven and spread melted chocolate on top. Set in freezer for 20-30 minutes, or until chocolate is hard. Cut into squares and enjoy!
*I recommend heating back up before eating!

Donsuemor Chocolate Dipped Madeleines

Happy Monday! Sorry I have been so MIA these past two weeks. It has been a crazy time for me with completing major DIY projects at my new place and moving out of my first apartment. Now that I am all situated, I am back and ready to share a ton of content i've been working on for the holiday season! 

Today I wanted to share with you an easy chocolate dipped madeleine recipe using my favorite French-inspired baked goods brand, Donsuemor. This recipe is super simple and the dipped chocolate and powered sugar adds a little extra handmade love to each madeleine.

Also, you can now buy these in a 28 oz box (shown below) at Costco. Since they are individually wrapped they are perfect for a little something sweet on the go or to add to your lunch during the work day (or for those with kiddos!). They would also make great holiday gifts for clients or loved ones!


Now, time for the chocolate dipped madeleine recipe! If you prefer the recipe in a recap, scroll all the way to the bottom. 

First start out with a box of the madeleine cookies. You can use however many you are needing at the time, but I used 9. Line a baking sheet with parchment paper and lay your cookies out on top to flatten the parchment paper.

Next, using a double boiler melt 4 oz of dark chocolate until smooth and creamy. Once melted, remove from heat. 


Dip each madeleine into the melted chocolate, I wanted to do mine at an angle but you can dip them however you want. Then, place them back onto the parchment paper and repeat with the remaining cookies. 

Once all cookies are dipped, place the baking sheet into the freezer for 15-30 minutes or until chocolate is hardened. 

Remove the madeleines from the freezer and sift 1/2 TBS powdered sugar onto the cookies (more if you'd like). Voila!

makes 9 cookies

Spicy Chicken Quinoa Bowls

serves 3-4

Happy Tuesday! Thank you everyone for all the sweet birthday wishes! 27 is already off to a great start! This week, I am playing catch up after being in New York all weekend. It was jam packed with things, but a complete blast! Be on the lookout for a trip recap next week. Now time to tackle the rest of the week ahead!

Today I am sharing a spicy chicken quinoa bowl with you. It is an easy meal to throw together and you will have a leftovers for the whole week. You can modify this recipe to include anything you have in your fridge!

What You Need
For The Chicken
2 chicken breast, pounded lightly
2 TBS olive oil
2 TBS lime juice
2 garlic cloves, minced
2 TSP chili powder
1 TSP cumin
1/2 TSP salt

For The Brussels
1 LB brussel sprouts, halved
Olive oil
Mexican spice blend (I used this one)

Everything Else
Quinoa, cooked
Salsa
Cilantro, chopped
Cherry tomatoes, halved
Lime, quartered 
Paprika

Directions
For The Chicken
1. Mix all of the ingredients expect the chicken in a bowl.
2. Add in the chicken and let marinate for at least 30 minutes.
3. Preheat the oven to 400° and spray a baking dish with olive oil.
4. Remove chicken from marinade and place on pan. Let cook in oven for 20-30 minutes or until the internal temperature reaches 160°. 
5. Keep warm.

For The Brussel Sprouts
1. Preheat the oven to 400° and line a rimmed baking sheet with parchment paper.
2. Toss brussel sprouts in olive oil and then spread out in pan. 
3. Top with 1-2 TSP of the mexican spice blend.
4. Cook in the oven for 20-30 minutes until crispy. Keep warm. 

Assembly
1. Place quinoa, brussels, chicken and cherry tomatoes into the bowl.
2. Top with salsa, cilantro, paprika and a lime wedge. 
3. Enjoy!

NYC Bound


Helllloooo early weekend! This morning, I am headed off the NYC for a work trade show but we are going up a few days early for some fun. Every year this trade show falls on my birthday, so why not go up early to celebrate?! We have my birthday dinner booked at The Fat Radish and then a kickboxing class at Shadowbox. We are also going to see a play tonight and then Live With Kelly & Ryan on Monday! Other than that, we are checking out all the foodie places and shopping along the way.
