Alfredo Spaghetti Squash

serves 4-6

What You Need
1 medium to large spaghetti squash, cooked and shredded
1 rotisserie chicken, pulled apart and bones discarded
1 cup raw cashews
3 cups boiling water
2 TBS nutritional yeast, this is my favorite brand
2 garlic cloves, peeled
1 TBS fresh lemon juice
1/2 TSP salt
3/4 cup unsweetened almond milk (or milk of your choice)
1/2 cup fresh basil, chopped + more for topping

Directions
1. Cook your spaghetti squash following the directions above. Once cooled, shred with a fork and set aside.
2. While the squash is cooking, place your cashews into a large bowl and cover with boiling water. Cover with a towel and let sit for 30 minutes.
3. Time to make the sauce. In a food processor or immersion blender, add the drained cashews, nutritional yeast, garlic cloves, lemon juice, salt and almond milk. Process this until a sauce forms. Add more salt if needed.
4. Place your squash and chicken into a large skillet over low to medium heat. Top with the Alfredo sauce and mix well, making sure everything is covered.
5. Cook until everything is heated through. Lastly, remove from heat and stir in the basil.
6. Top with additional basil and enjoy!

We are finally to the weekend and it is going to be a semi beautiful one here in Atlanta. Saturday is going to be amazing, so I definitely want to be outside as much as possible. Then Sunday we're getting rain, so it will be a perfect day to lounge and watch my Netflix shows. What are y'all up to this weekend? Instagram Round Up

It's been way too long since I last updated you on what i've been up, so I decided to do an Instagram round up this week. I hope you enjoy getting a little more insight into my everyday life!

Monday Night Garage: A few weeks ago, I headed over to Monday Night Garage for the first time. I was so excited, because Monday Night is my absolute favorite brewery in Atlanta. It was a fun time with friends, but definitely a little farther out than i'd like. 

Whiskey Bird: I met the Dining Out Atlanta crew at Whiskey Bird for our monthly mixer. I had been dying to try this place ever since it opened a few months back. It was so good and I can't wait to go back for brunch one weekend soon for one of their bubble waffles!

Anna and Gracie: When Anna came to visit, we decided to check out Muchacho. We walked the Beltline with Gracie and enjoyed lunch al fresco. I absolutely loved the atmosphere and the food was pretty good as well. If you haven't been yet, you definitely need to check it out soon on a nice day!

Murphy's: During our last snow storm, I was snowed in my apartment. After being inside all day, I just had to get out. Gracie and I went on a walk around the Highlands and played fetch in a snow covered parking lot. The snow was so beautiful, but I am glad we don't have it all Winter long!

New Realm: Right before New Realm Brewing opened, I got to attend their media preview event. I got a tour of the space and got to taste their delicious food and beer. They are now open and a HUGE hot spot in the Atlanta drinking scene!

Anna and I: For New Years, my family and I went to Punta Cana for a little R&R. It was so nice and much needed! We rang in the New Year dancing the night away at a restaurant on the beach.

Gracie: Gracie turned 3 in December! We celebrated with lots of treats and toys. She continues to bring more and more joy into my life every single day!

Brooklyn Bridge: Back in November, I had a work trade show in NYC. My mom, sister and I went up a few days early to explore and celebrate my birthday. We even ventured over to Williamsburg and I fell in love. I can't wait to go back this November!

Georgia Shirt: A few months back, I was invited to College Vault's Blogger Brunch. I enjoyed small bites, cocktails and lots of activities to show off their newest products. College Vault has fashionable college gear that will help you cheer on your team in style. One of my favorite pieces are their sweaters!

Orange Cashew Chicken Lettuce Wraps

serves 4-6

What You Need
For The Sauce
1 TBS fresh ginger, minced
3 garlic cloves, minced
Zest of 1 orange
6 TBS coconut aminos
2 TBS rice vinegar 
3 TBS honey
2 TBS water
2 TSP tapioca starch

For The Wraps
1 TBS olive oil
1 LB ground chicken
2 large carrots, chopped
1 yellow bell pepper, diced
1 cup unsalted cashews, chopped
Red pepper flakes, to taste
3 green onions, thinly sliced + more for topping
Lettuce leaves, for wrapping

Directions
1. In a small bowl, whisk together all the sauce ingredients. Set aside.
2. Heat the olive oil in a medium skillet over medium heat. Add in the ground chicken and let cook while breaking it up with a spoon.
3. Once chicken has been cooking for about 5 minutes, add in the diced bell pepper and carrots. Give everything a good stir and continue to cook until chicken is no longer pink.
4. Add in the cashews and red pepper flakes and cook for an additional minute.
5. Add in the sauce and continue to cook for 2 minutes. Be sure to toss everything in the sauce. 
6. Remove from heat and stir in the green onions. 
7. To assemble, top each lettuce wrap with 1/2-2/3 cup of the chicken mixture. Top with green onions and enjoy!

Weekend Ahead!

Happy Friday! Can we talk about the weather here in Atlanta?? I am currently wearing a dress...in February! Gotta love living in the South. Fingers crossed that the cold weather stays away.

This week flew by so fast! I was in Charlotte Monday and then celebrated Valentine's Day Wednesday. I am one of those people who love Valentine's Day! Any excuse to celebrate love, get flowers, drink wine and eat good food is a great holiday in my book. I spent the evening at one of my favorite restaurants, The Iberian Pig in Decatur. It was amazing as always!

This weekend I plan on deep cleaning my apartment (dreading it, but it MUST be done) and then celebrating a close friend's birthday on Saturday. It will be a super fun weekend! What are y'all up to?

Cookie Dough Bars

makes one 8"x8" pan

What You Need
2 cups almond flour
3 TBS coconut flour
1/4 cup coconut sugar
3 TBS melted coconut oil
1/2 cup + 2 TBS almond butter
1 cup + 1/4 cup chocolate chips, separated (these are my favorite)
2 TBS coconut oil

Toppings
Strawberries
Sea salt

Directions
1. Grease an 8"x8" pan and set aside.
2. In a stand mixer, combine the almond flour, coconut flour and coconut sugar.
3. Add in the coconut oil and almond butter and mix well.
4. Stir in the 1/4 cup chocolate chips and then press mixture into the greased pan.
5. Add to the freezer and start preparing the chocolate topping.
6. In a small sauce pan over medium heat, melt the 1 cup chocolate chips and 2 TBS coconut oil together.
7. Once melted, remove the cookie dough from freezer and pour the melted chocolate on top.
8. Spread out evenly and then place back in freezer. 
*At this time if you want to top with sea salt or strawberries, add them before placing the dough back in the freezer.
9. Once set, remove from freezer, slice and enjoy!

Rainy Weekend Ahead!

We've made it to the weekend! Even though it's going to rain ALL weekend here in Atlanta, I am happy to have some time to relax. I have zero plans and I am super excited about it! Maybe i'll go see a movie or try a new restaurant...the world is my oyster. Sunday, I am heading up to Charlotte for the day/night so if anyone has any recommendations, please send them my way!
