Superfood Waffles

Moringa is a great superfood that helps: 
- Reduce tiredness and increases energy levels
- Gives you glowing skin
- Boosts immunity
- Promotes muscle growth
- Reduces stress 
- Aids in digestion

It also adds a great flavor to these waffles! I got my powder from Homegoods, but Amazon also has some great options. These are also delicious and super festive for St. Patty's Day!

What You Need
3 eggs, yolks and whites separated
1/4 cup light coconut milk
1 cup almond flour
1/4 TSP salt
1 TSP vanilla
1 TBS maple syrup
2 TBS moringa (or similar green superfood powder) 
2 TBS coconut oil, melted
Olive oil, for greasing waffle iron

Honey or maple syrup

1. Preheat your waffle iron.
2. In a medium bowl, whisk together the egg yolks and coconut milk. 
3. Stir in the almond flour, moringa and salt.
4. Then, stir in the coconut oil.
5. Whisk the egg whites in a separate bowl, until stiff peaks form. Then fold 1/4 of the egg whites into the batter.
6. Next, in 3 batches fold the batter into the egg whites until everything is combined.
7. Finally, stir in the maple syrup and vanilla.
8. Pour batter into the waffle iron and let them cook for about 5-10 minutes or until lightly brown and crisp. 
*Mine took about 7 minutes.
9. Top with your desired toppings and enjoy!
