Wedding Weekend Ahead!

Happy Friday! Today is a big day for me. Today I am closing on my first condo! I cannot wait to start moving in, making it my own and sharing it with all of you. Even though today is finally the big day, it has been a hectic week leading up to this moment. Getting everything in order is v stressful! Luckily, I have the best friends and family that helped keep me sane through it all! Now it's time to kick back and enjoy having a space I can call my own!

This weekend, I am headed up to Ellijay for an old family friend's wedding. It is going to be a blast celebrating their relationship and dancing the night away! We are going up early to do all the Fall things- apple picking, pumpkin patch, boiled peanuts, etc. I can't wait! See you all Monday!

Quinoa + Eggplant and Goat Cheese

serves 3-4

What You Need
1 LB baby eggplant or 1 large normal eggplant, cut into cubes
3 TBS olive oil, divided
Salt and pepper, to taste
1/2 bunch of kale, taken off stem and chopped
1 1/2 cups quinoa, cooked
2 garlic cloves, minced
1 TSP dried thyme
1/4 cup herbed goat cheese

1. Preheat oven to 425° and line a baking sheet with parchment paper.
2. In a bowl, toss together eggplant, 2 TBS olive oil, salt and pepper and then spread on baking sheet.
3. Cook in the oven for 20-25 minutes or until soft. Remove from oven and keep warm.
4. Heat 1 TBS olive oil in a skillet over medium heat. Add the garlic cloves and cook for 30 seconds.
5. Add in the kale and sauté until slightly wilted, about 5-10 minutes.
6. Add the eggplant, quinoa and thyme to the kale skillet and toss everything together. Add salt and pepper to taste.
7. Top with goat cheese and enjoy!

Music Midtown Weekend!

Happy Friday loves! I am so exhausted from this week, but gotta keep the enthusiasm high because it's Music Midtown weekend. I can't wait to jam out to some great bands while taking in the city views. The line up this year is amazing! I don't even think i'll have much down time in-between shows. Happy Tuesday! It has been a minute since I updated y'all on what i've been up to lately, so I decided to do an Instagram round up today. I hope you enjoy this little peak into my life!

B & I: For 4th of July this year, Brian and I celebrated on top of Ponce City Market with games, fun and fireworks. Other than the torrential down pour during the end of the fireworks, it was a blast! I would highly recommend spending your next 4th there!

Pizza: In July, I did a Whole 30. For my last meal, I made a pizza topped with prosciutto, basil, sun dried tomatoes and burrata. I didn't last the entire Whole 30 (b/c delicious birthday cake at Olivia's birthday), but it was still a much needed reset for my body!

Flower Child: Flower Child finally opened in Atlanta over the Summer. I went to go check it out and fell in love with the healthy concept they offer! The food was delicious and the interiors were filled with plants and motivational signs. If you haven't been yet, be sure to check them out next time you are in the Buckhead area!

Monday Night Beer Glass: I finally made it back to my favorite brewery, Monday Night Brewing. Gracie also came with and was a hit with everyone!

Nowak's Crab Cakes & Chips: Another new spot I checked out recently was Nowak's here in Morningside. This place is only a 15-20 minute walk from my place, so it is a great neighborhood spot to go to. I met my Dining Out Atlanta crew there and we got to enjoy different bites from their menu. It was all delicious and I would definitely go back!

Basic Kitchen Restaurant: I went to Charleston at the end of July to celebrate my second cousins's first birthday! We had to try out some new restaurants while we were there, so we had lunch at Basic Kitchen while shopping around King Street. It had great interiors and good food. The service was a little slow, but I would go back for a healthy meal!

My Family & I: This was the girls in the family at Olivia's first birthday party! It was so fun celebrating her and getting to hangout with everyone. I can't wait to continue to see her grow!

Farmer's Market: If you didn't already know, going to farmer's markets is one of my favorite weekend activities. I love grabbing a coffee, checking out the local produce and getting some flowers. Gracie always gets to come and always gets a treat of some sort from one of the pet stands. This was at Freedom Parkway Farmer's Market, one of my favorites and walkable from my house!

Me On The Beach: In August, my mom and I went to Gulf Shores for work appointments. Every time we go, we stay on the beach so we can get a few hours of sun in, but unfortunately this trip we didn't even have time for that. Instead, we grabbed dinner to go and ate it on the beach. We then came back in the morning before we headed home to see the sunrise. It was a nice little work trip!

Sweet Potato Breakfast Cookies

makes 12 cookies

What You Need
1/2 cup mashed sweet potato
1/4 cup honey
1/2 TSP nutmeg
1 TSP cinnamon
2 TBS coconut flour
1 1/4 cup shredded coconut
1 1/2 TBS chia seeds
2 TBS coconut oil
1 egg white
1 TBS flax meal
1/2 cup nuts (walnuts, pecans, etc.), chopped
1 TBS chocolate chips

1. Preheat oven to 350° and line a baking sheet with parchment paper.
2. In a mixing bowl, combine all of the above ingredients. 
3. Roll about 2 TBS of the dough into a ball. Place on baking sheet and slightly flatten with your hand. Repeat with remaining dough.  
4. Bake in the oven for 12 minutes, of until the cookies are slightly brown on the edges.
5. Remove from the pan to a cooling rack. Let cool for 5-10 minutes. Enjoy!

Weekend Ahead!

Happy Friday! I love how quickly 4-day weeks go by. It was Monday and then I blinked and now it's Friday. I wish every week could be like this! This has been a crazy week for me. I put an offer in on a condo and it was accepted! I will only be moving 5 minutes down the road, but it will be a place all my own. Plus, it's a 2 bedroom so if anyone wants to come visit i've got you a bed! Be on the lookout for a blog post about my experience in the next few weeks.

Vivo Per Lei Matcha Mask & Peel

If you didn't already know, I have an obsession with skincare products. I love trying out new items and seeing how they work for my skin. There is not many things better than a face mask and bubble bath to combat the stresses of the work week. 

That's why when Vivo Per Lei asked me to try out some of their products, I was thrilled! I ended up picking the Botanical Matcha Refining Facial Peel and the Matcha Purifying Mask. Matcha helps detoxify your skin, remove toxins, fight free radicals and combat acne, which I desperately need. 

I tried out both the mask and the peel and I was highly impressed. The mask left my skin feeling plump, hydrated and super smooth. It also was very refreshing and relaxing to put on. The peel helped exfoliate my skin and remove all the flakiness from my acne products. It was a quick and easy process to just rub on and exfoliate and then wash off. My face felt baby smooth after. Event To Attend: Wine Riot

I hope you all had a wonderful long Labor Day weekend! I know I did! I finally saw Crazy Rich Asians (highly recommend BTW), hung out with B, grilled out with my family and just chilled. Now I am so ready to tackle to week ahead! 

Luckily, I have something super fun to look forward to this weekend! I am going to an event dedicated to wine, called Wine Riot. Yep, you heard that right! I will be in my own personal heaven tasting and learning about all different types of wine. Even though wine is the main event, there will also be tons of food to help soak up all that wine.
