Sweet Potato Breakfast Cookies

makes 12 cookies

What You Need
1/2 cup mashed sweet potato
1/4 cup honey
1/2 TSP nutmeg
1 TSP cinnamon
2 TBS coconut flour
1 1/4 cup shredded coconut
1 1/2 TBS chia seeds
2 TBS coconut oil
1 egg white
1 TBS flax meal
1/2 cup nuts (walnuts, pecans, etc.), chopped
1 TBS chocolate chips

1. Preheat oven to 350° and line a baking sheet with parchment paper.
2. In a mixing bowl, combine all of the above ingredients. 
3. Roll about 2 TBS of the dough into a ball. Place on baking sheet and slightly flatten with your hand. Repeat with remaining dough.  
4. Bake in the oven for 12 minutes, of until the cookies are slightly brown on the edges.
5. Remove from the pan to a cooling rack. Let cool for 5-10 minutes. Enjoy!
