Spicy Chicken Quinoa Bowls

serves 3-4

Happy Tuesday! Thank you everyone for all the sweet birthday wishes! 27 is already off to a great start! This week, I am playing catch up after being in New York all weekend. It was jam packed with things, but a complete blast! Be on the lookout for a trip recap next week. Now time to tackle the rest of the week ahead!

Today I am sharing a spicy chicken quinoa bowl with you. It is an easy meal to throw together and you will have a leftovers for the whole week. You can modify this recipe to include anything you have in your fridge!

What You Need
For The Chicken
2 chicken breast, pounded lightly
2 TBS olive oil
2 TBS lime juice
2 garlic cloves, minced
2 TSP chili powder
1 TSP cumin
1/2 TSP salt

For The Brussels
1 LB brussel sprouts, halved
Olive oil
Mexican spice blend (I used this one)

Everything Else
Quinoa, cooked
Cilantro, chopped
Cherry tomatoes, halved
Lime, quartered 

For The Chicken
1. Mix all of the ingredients expect the chicken in a bowl.
2. Add in the chicken and let marinate for at least 30 minutes.
3. Preheat the oven to 400° and spray a baking dish with olive oil.
4. Remove chicken from marinade and place on pan. Let cook in oven for 20-30 minutes or until the internal temperature reaches 160°. 
5. Keep warm.

For The Brussel Sprouts
1. Preheat the oven to 400° and line a rimmed baking sheet with parchment paper.
2. Toss brussel sprouts in olive oil and then spread out in pan. 
3. Top with 1-2 TSP of the mexican spice blend.
4. Cook in the oven for 20-30 minutes until crispy. Keep warm. 

1. Place quinoa, brussels, chicken and cherry tomatoes into the bowl.
2. Top with salsa, cilantro, paprika and a lime wedge. 
3. Enjoy!

NYC Bound

Helllloooo early weekend! This morning, I am headed off the NYC for a work trade show but we are going up a few days early for some fun. Every year this trade show falls on my birthday, so why not go up early to celebrate?! We have my birthday dinner booked at The Fat Radish and then a kickboxing class at Shadowbox. We are also going to see a play tonight and then Live With Kelly & Ryan on Monday! Other than that, we are checking out all the foodie places and shopping along the way. I would call that a successful birthday kickoff! Be sure to follow along on Instagram for all the fun (@smwrightt).

Treat your Self With Gleam Living

Happy Tuesday! I wanted to share with you all a local women owned, Atlanta based company called Gleam Living. I am a huge fan of hand crafted soap bars and candles! I think they really are an extremely higher quality than something you can buy in store. Luckily for me, I got to try out some of Gleam Living's amazing products- a candle, soap bar and wax melts. 

For my candle, I got the 12 oz Classic Wooden Wick Soy Candle in Ginger Tea. Since it has a wood wick, every time I light it I feel like i'm right next to a fire place. Maybe if I fill my entire apartment with them, it will be like a have a true fireplace...a girl can dream right?!

Creamy Tomato & Mushroom Soup

serves 6-8

What You Need
1/2 large onion, diced
2 garlic cloves, minced
1 TBS fresh rosemary, chopped
1 LB mushrooms, diced
1 (28 oz) can fire roasted tomatoes
1 (14 oz) can diced tomatoes
4 cups broth
3/4 cup coconut cream
1 TSP salt

1. In a large soup pot, heat the oil over medium heat. Once warm, add in the minced garlic and stir for 30 seconds. 
2. Then add in the onion and cook until translucent, about 5-10 minutes.
3. Next, add in the rosemary and mushrooms. 
4. Once mushrooms have softened, add in the fire roast tomatoes (do not add the regular diced tomatoes yet) and broth. Bring to a boil and then turn the heat down to simmer. Let cook for 30 minutes.
5. After 30 minutes, use an immersion blender to blend everything together until you get a smooth texture.
6. Next, add in the remaining tomatoes, coconut cream and salt. Let the soup continue to simmer for another 30 minutes. Remove from heat and serve!

Happy Friday! This was a weird week for me. I was so thrown off all week, each day feeling like it should of been Friday. That is no fun! It was a busy week though, so it went by pretty fast. In exciting news: my condo started minor renovations this week! I cannot wait to share it with y'all once it's all done and i'm moved in. 

If the renovations get completed by this weekend, i'll more than likely be spending down time DIYing at my condo. I'm also headed back to Iberian Pig tonight to try out their happy hour with some friends and I cannot wait! If you didn't know, Iberian Pig is one of my favorite restaurants. I mean how can you go wrong with wine and cheese?! 

I also recently joined Big Brothers Big Sisters and have my first outing with my little this weekend. I can't wait to spend more time with her and just get to know her. Other than that, I will be watching football and relaxing when I can. What do y'all have planned this weekend?
