Berry & Banana Oatmeal Breakfast Bake

Serves 6

This delicious berry & banana oatmeal breakfast bake is perfect to make ahead for busy mornings or long weekends. With only 11 ingredients, this dish is super easy and packed with tons of flavor!

What You Need
1 banana, sliced
1 container (6 oz) raspberries
1 container (6 oz) blackberries
2 1/2 cups oats or gluten-free oats
1 cup almond milk
1/4 cup maple syrup
3 TBS coconut sugar
1 TSP cinnamon
1 TSP baking soda
1 TSP vanilla extract
1/2 TSP salt

1. Preheat the oven to 350° and get out an 8x8 baking dish.
2. Pour the raspberries and blackberries on the bottom of the pan. Layer the banana slices on top of the berries.
3. In a medium bowl, mix together the oats, coconut sugar, cinnamon, baking soda and salt.
4. Next, mix in the almond milk, maple syrup and vanilla extract.
5. Spread oat mixture over the fruit, making sure to spread it all the way to the corners. 
6. Bake in the oven for 40 minutes and then remove and let cool for 5.
7. Serve with additional fruit, cinnamon and a splash of almond milk. Enjoy!
