Sweet Potato Tahini Breakfast Muffins

Makes 6 muffins

Happy Monday! I have a busy week ahead, which means I will have zero time to make breakfast. When I have weeks like this, I like to go ahead and make grab-and-go breakfast options so that I have one less thing to worry about in the morning. These sweet potato tahini breakfast muffins are easy to take in the car and are packed with great ingredients to keep you full. Top with additional tahini for an even better breakfast or snack. I hope you enjoy!

What You Need
1/2 cup sweet potato, mashed
5 TBS tahini
4 1/2 TBS coconut flour
1 egg
1 TSP vanilla extract
3 TBS coconut sugar
1 TSP cinnamon
1/2 TSP nutmeg
1/2 TSP cloves
3/4 TSP baking powder
1/4 TSP salt
1 TBS chia seeds
3 TBS chocolate chips

Directions
1. Preheat your oven to 400° and grease a muffin tin with coconut oil. 
2. Using a mixer, combine the sweet potato, tahini and coconut flour.
3. Next, add in the egg and vanilla and mix until combined.
4. Add in the coconut sugar, cinnamon, nutmeg, cloves, baking powder and salt. Mix well.
5. Finally, stir in the chocolate chips and chia seeds. 
6. Fill the muffin tins about 1/2 way with batter. Cook in the oven for 20 minutes, or until the tops are starting to brown. 
7. Let cool and then enjoy!

Hello Friday! Boy am I glad to see you! After a busy work week, I am so happy to have a fun weekend ahead. My sister's birthday was yesterday, so we are celebrating with a fun brunch tomorrow. I can't wait to hangout with her and all her friends over mimosas and delicious food. Other than that, I will be hanging out with friends around the city and relaxing. Happy weekend! Another long week in the books. It was one of those weeks where I just couldn't catch up on sleep and was constantly tired. I needed ALL the coffee.

2019 Skincare Routine


With a new year, comes an improved skincare routine! In the last six months or so, I have started shifting my skincare routine to more natural products. Just like my food, I want my skincare products to be high quality and have no added chemicals. Luckily, there are so many brands out there that have amazing products and don't break the bank!

I have been using this eye cream for 3 months or so. It is easy to apply/rub in and keeps my skin hydrated and looking great.

I got this at TJ Maxx, but really like it. It uses kiwifruit seed oil to keep the skin hydrated. It also smells amazing!

I also got this at TJ Maxx. It is an Australian company and contains only natural and organic ingredients. It spreads on easily and keeps my skin feeling hydrated all night. 

I don't have enough good things to say about this product or this brand! It has kept my combination skin super moisturized during the Winter and leaves my skin feeling radiant. 

This is another great Cocokind product! I use this in replace of makeup wipes and it lasts me forever. It doesn't always get my makeup off super quickly, but it is so much better for my skin and leaves me feeling super clean once it is all rinsed off. 

I just purchased this about 2 weeks ago when I went off my topical acne treatment. I really like it so far and have noticed it helps prevent breakouts. Even when I do breakout, it clears it up fairly quickly!

I use this as a spot treatment overnight on breakouts. I feel that it really does help those under the surface cysts and reduces inflammation faster. You can also use it as a normal face mask a few times a week.

I have been using this for about 2 years now and still love it! It smells amazing (hello lavender) and truly does have a calming affect on my skin. It is also helpful at fighting breakouts.  

Day Cream With Tea Tree Essential Oil
I cannot find this online, but I got it at TJ Maxx. It's not my favorite and I cannot wait to finish it of so I can get something better!

Weekend Ahead!

Happy Friday! Boy, did this week seem to drag on to anybody else?! I felt like Friday was never going to get here. This dreary weather also didn't help! However, I was super busy with work and my social life so I didn't have much down time. I am so looking forward to that this weekend! I am also really hoping for some nice weather so I can spend time outside. Other than that, i'll be laying low, hanging out with friends and working on my condo. It truly is a never ending process!
