Homemade Paleo Pasta + Bolognese

serves 4-6

This homemade paleo pasta + Bolognese is a go-to in my house! It is slightly time consuming, but so worth it because it really does taste like real pasta. Give it a try and let me know what you think!

What You Need
For The Bolognese 
1 lb ground beef
1 brown onion, diced
2 cans (14.5 oz) of diced tomatoes
2 large carrots, diced
3 garlic cloves, minced
1 cup beef broth
1 TBS tomato paste
2 TSP oregano
1/2 TSP Italian seasoning
1/4 TSP red chili flakes
1/4 TSP salt
1/4 TSP pepper

For The Pasta
1 1/2 cup almond flour
1 1/2 tapioca flour, plus additional for dusting
1 TSP salt
2 eggs
4 egg yolks

Toppings
Parmesan 
Fresh oregano, chopped

Directions
For The Bolognese 
1. Heat a stock pot over medium heat and add in the garlic. Cook for 30 seconds. 
2. Add in the onion and beef. Cook until beef is no longer pink, about 10 minutes.
3. Add in the rest of the ingredients and cover. Let simmer for 20-25 minutes.

For The Pasta
1. Heat a large pot of water over high heat and bring to a boil. 
2. While the water is heating up, make the pasta. In a large mixing bowl, combine the almond flour, tapioca flour and salt.
3. Make a hole in the middle and add in the eggs. Whisk everything together well.
4. Using your hands, form the dough into 4 balls. Place three in the fridge covered by saran wrap.
5. Roll out the remaining ball on a flour surface. I find it easier if I use parchment paper between the rolling pin and the dough, so that it doesn't stick.
6. Roll the dough until it is about 1/8 inch thick. Then use a knife to cut the dough into thin strips. 
7. Repeat with the remaining balls. 
8. Once all dough has been cut, add it to the boiling water. Let cook for about 5 minutes and then pour them into a strainer. 
9. Let them slightly cool and then place on dish. Top with bolognese, oregano and parmesan. Enjoy!
