Casual Shirt Dress x Platform Sandals

When it's hot out, there isn't a much better outfit than a casual shirt dress x platform sandals. You can just throw both of these pieces on and call it a day! I found this dress at TJ Maxx and the shoes at H&M, but they are sold out so I offered some similar options below.

Weekend Ahead!

Happy Friday! It was another crazy work week for me, plus my Mom had a big birthday that we celebrated. I want to give her a shout out, because she takes all my pictures for me and does the best job! She always keeps it fun too! Happy xx birthday Mom!

This weekend, I am heading up to Athens to spend the weekend with my boyfriend. We've got an engagement party to go to and might even cheer on the UGA baseball team against Alabama tonight. Other than that, it will be pretty low key. What are y'all up to this weekend?

Sweet Potato & Black Bean Burgers w/ Chili Mayo

makes 6-8 patties

What You Need
For The Burgers
2 sweet potatoes, sliced in half (long way)
1 can of black beans, drained and rinsed
1/4 TSP salt
1 TSP onion powder
1/2 TSP garlic powder
1 TSP chili powder
1/4 TSP oregano
2 TSP cumin
1/4 TSP black pepper
1 1/2 cups cooked quinoa 

For The Chili Mayo
1/4 cup avocado mayo
2 TSP roasted red chili paste
Juice of 1/2 a lime
Salt and pepper, to taste


For The Burgers
1. Preheat the oven to 400° and line a baking sheet with parchment paper. Place sweet potatoes open side down onto the pan. Bake in the oven for 40 minutes or until soft when pierced with a fork. Once cooked, remove from oven (keep oven on) and let cool for 5-10 minutes before scraping out the insides. I saved the skins to use for other recipes!
2. In a large bowl, add the black beans, spices and sweet potato insides. Mash everything up well until you get a semi-chunky consistency. 
3. Line a baking sheet with parchment paper. Using your hands, form the dough into 6-8 patties depending how big you want them and place onto the pan. Cook in the oven for 30 minutes on one side and then flip and cook for 10 additional minutes.
4. Remove from oven and let cool for 5 minutes before eating!

For The Chili Mayo
1. Combine all ingredients into a bowl and mix together. 
2. When burgers are done, top with chili mayo and enjoy!

Acne is the WORST. I have been battling with it since I was a kid and still get hormonal acne from time to time. I have a major skincare addiction, so I love trying new product and seeing how well it works for me. After reading an article about the KILLA Kit from ZitSticka, I knew I had to give them a try. 

KILLA is a patch used to target under-the-skin acne before it becomes an even bigger problem. They use quality ingredients, including hyaluronic acid, salicylic acid, and sodium hydroxide to help zap the zit without drying you out. The kit is sold for $29 and comes with 8 microdart patches and 8 cleansing swabs. They also have super cute packaging!

Now...onto my thoughts and experience using the product. If I had to rate it on a scale, I would give it a 6 out of 10. The thing is, they are very tricky to determine if I would recommend them or not. They worked great on a few of my zits and then didn't do anything for the others. You have to know exactly when to put it on, so that you can target the zit before it even reaches the surface. 

A major plus- the zits it did work on, were cleared in a day or two which was amazing! However, those were less intense zits and not my typical cystic acne. Since they are $29 for 8 (breaks down to $3.63 per patch), I don't know if I would buy another box. I do think that you should try it out for yourself before you make a decision. Like I said, it did work great on some of my zits so there is hope that it could work better for you than it did for me!

Happy Mother's Day Weekend!

The weekend is here and I am beyond happy! I don't know about you, but this week has been so crazy. There truly isn't enough time in the day to get everything done and it is so stressful. However, it is Friday so we officially made it through another work week! Time to kick back and relax!

This weekend, I am celebrating one of my closest friend's engagement with a girls day brunch. I can't wait to spend time with some of my favorite people over delicious food and mimosas, of course! Other than that, I am relaxing and spending time with my family for Mother's Day. Don't forget to spoil all the mammas out there! See you Monday!

We have another glorious Friday ahead! This week, I finally got hit with the allergy bug and it is not fun. I am so sleepy but have no time to nap! I did get to check out a new restaurant this week called Calle Latina, in Decatur. It was amazing and I highly recommend going! I know i'll definitely be back for their sangria and fresh food. 

This weekend, I am just laying low since I am battling these terrible allergies. Maybe i'll actually catch up on some sleep, but probs not. However, I am grabbing brunch with some friends which will be super fun! We haven't decided where we are going yet, but i've got a few ideas up my sleeve. As far as Cinco de Mayo, I don't have any crazy plans, just going to cook in or grab some Mexican somewhere if I feel like battling the crowds! What are y'all up to this weekend?

Veggie Packed Salsa Verde Enchiladas + Cashew Sauce

serves 4-6

It's almost Cino de Mayo! That gives me every excuse to have a festive Mexican night packed with enchiladas, guac and margaritas. What is better than that?! I made these veggie packed salsa verde enchiladas + cashew sauce this week and they were TO DIE FOR. I made both the tortillas and salsa verde from scratch and they were definitely worth it! 

What You Need
For The Cashew Sauce
1/2 cup + 2 TBS of water
1 cup of cashews
2 TSP apple cider vinegar
1/2 poblano pepper, diced
1 1/2 TBS lemon juice
1 TSP maple syrup
2 TBS nutritional yeast
Salt and pepper, to taste

For The Enchiladas
8-12 pack of tortillas (or you can make your own)
2 cups salsa verde, divided (or you can make your own)
Olive oil
1 can (15 oz) of unsalted corn, drained and rinsed
1 can (15 oz) of unsalted black beans, drained and rinsed
2 medium zucchinis, cut into 1/2 inch slices and then in half again (to resemble half moons)
1 white onion, cut into half moon slivers
6 garlic cloves, minced
4 handfuls of kale, chopped
Salt and pepper, to taste 

Avocado, sliced
Cilantro, chopped
Lime wedges

For The Cashew Sauce
1. Place all ingredients into a food processor and blend. Make sure to scrape down the sides halfway through.
2. Store in a jar in the fridge until ready to use.

For The Enchiladas
1. Preheat the oven to 375° and line a baking sheet with parchment paper.
2. Spread out the zucchini, corn, onion and garlic onto the baking sheet. Drizzle with olive oil, salt and pepper. Bake in the oven for 25 minutes or until vegetables are starting to soften. Keep oven on!
3. In a large skillet, add 1 TBS olive oil and sauté the kale and black beans until kale is wilted. 
4. Once vegetables are done cooking in the oven, add them along with 3/4 cup of the salsa verde to the skillet. Mix everything together well and remove from heat.
5. Spread 3/4 cup of salsa verde onto the bottom of a 9"x12" baking dish. Now time to assemble these enchiladas!
6. Fill each tortilla with some of the veggie filling and then place open face down, into the baking dish. Continue with the rest of the tortillas. I had a ton of filling leftover!
7. Spread 1/2 cup of salsa verde on top of the enchiladas and then bake in the oven for 20 minutes. 
8. Remove the enchiladas and top with as much cheese sauce as you want. Place back in the oven and bake for 10 more minutes. Remove and let cool for 5 minutes.
9. Top with your desired toppings and enjoy!
