Sweet Potato & Black Bean Burgers w/ Chili Mayo

makes 6-8 patties

What You Need
For The Burgers
2 sweet potatoes, sliced in half (long way)
1 can of black beans, drained and rinsed
1/4 TSP salt
1 TSP onion powder
1/2 TSP garlic powder
1 TSP chili powder
1/4 TSP oregano
2 TSP cumin
1/4 TSP black pepper
1 1/2 cups cooked quinoa 

For The Chili Mayo
1/4 cup avocado mayo
2 TSP roasted red chili paste
Juice of 1/2 a lime
Salt and pepper, to taste

Toppings
Avocado
Lettuce
Onion
Buns

Directions
For The Burgers
1. Preheat the oven to 400° and line a baking sheet with parchment paper. Place sweet potatoes open side down onto the pan. Bake in the oven for 40 minutes or until soft when pierced with a fork. Once cooked, remove from oven (keep oven on) and let cool for 5-10 minutes before scraping out the insides. I saved the skins to use for other recipes!
2. In a large bowl, add the black beans, spices and sweet potato insides. Mash everything up well until you get a semi-chunky consistency. 
3. Line a baking sheet with parchment paper. Using your hands, form the dough into 6-8 patties depending how big you want them and place onto the pan. Cook in the oven for 30 minutes on one side and then flip and cook for 10 additional minutes.
4. Remove from oven and let cool for 5 minutes before eating!

For The Chili Mayo
1. Combine all ingredients into a bowl and mix together. 
2. When burgers are done, top with chili mayo and enjoy!
